Citrus, Olive Oil, Apricot Granola

INGREDIENTS
Sauce
Zest of one orange
¼ c. Brown Sugar
1/3 c. Maple Syrup
1/3 c. Extra Virgin Olive Oil
1 tsp Vanilla
Granola
2 ¾ c. rolled oats
½ c. slivered almonds
1/3 c. pumpkin seeds
1 c. flaked coconut
3/4 c. dried apricot (or whatever dried fruit you like!)
½ tsp. salt
DIRECTIONS
Preheat the oven to 300.
Mix together oats, sunflower seeds, almonds, pumpkin seeds, salt and flaked coconut.
In a small saucepan warm the sugar, olive oil and syrup over low heat. When sugar is dissolved, remove from heat and add into the bowl of dry ingredients.
Line a large pan with parchment paper and spread granola out. Bake until dry and golden, approximately 15-20 minutes. I don't stir mine while cooking because I like chunky granola.
Remove granola from the oven and let cool to room temperature before transferring into containers.
